The History Of National Biscuit Day
Back when merchants and explorers began crossing the globe for trade and relocation, preservation methods for food were already well established.
The Ancient Greeks, Romans, Nordics, and Saxons would preserve flour-based edibles by baking them over a low heat for an extended amount of time.
The goal? To preserve the nutrients while removing all the moisture that generates mould.
Sweet treats were invented by the Persians, who began adding sugar, honey, jams, and other sweetened ingredients to their biscuits to enhance the flavour and provide nutrition, yet still remain edible over long journeys and in rather damp conditions across the seas.

Recipe: Oatmeal, Carrot And Quinoa Biscuits
Prep time: 15 mins
Cooking time: 15 mins
Serving size: 12 biscuits
- 1½ cup whole rolled oats – make into fine flour with a blender or food processor
- 1 cup whole rolled oats
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup pre-cooked quinoa
- 1 cup grated or shredded carrots
- 2 scoops Correxiko Collagen powder
- ½ teaspoon cinnamon
- ½ teaspoon sea salt
- 2 tablespoons ground flaxseed
- 5 tablespoons warm water
- ½ cup almond butter
- ¼ cup coconut oil, melted
- ¼ cup honey
- ½ cup nuts and seeds
- ½ cup dried berries
- Preheat oven to 180°C
- Line a large baking sheet
- Using your blender or food processor, process 1½ cups rolled oats into a fine flour and measure out exactly one level cup
- In a large bowl, combine flour, 1 cup whole oats, baking powder, baking soda, cinnamon, and salt
- Fold in cooked quinoa
- Add grated or shredded carrots and stir coated with flour completely
- In a small bowl, combine flaxseed, Correxiko Collagen, and warm water and stir through thoroughly
- Set aside to thicken (about 5 minutes)
- In a medium bowl, combine almond butter, coconut oil, and honey and stir until well-mixed
- Stir in flaxseed, Correxiko collagen, and water mixture
- Combine wet and dry ingredients in large bowl and fold until combined
- Stir in nuts, seeds, or berries
- Using approximately ¼ cup of batter for each biscuit, scoop final mixture onto baking sheet in 12 equal portions
- Bake for 15-20 minutes (depending on oven) until lightly browned
- Remove pan from oven and allow to cool for a few minutes before transferring the biscuits to a wire rack to finish cooling
- Store in an airtight container until needed.
- Can be frozen.
